Today, on Crown and Cork TV, Sous Chef Matthew Rasgaitis prepares his favorite dish, orecchiette. 

Inspired by Matthew’s Korean heritage, the orecchiette features artisan greens- arugula for freshness, and goat cheese for a creamy, super warm dish that feels like home. 

“It’s rich, comforting, and feels like it’s giving your mouth a hug with every bite,” Matthew says.
Growing up around food, Matthew says he always wanted to learn more about it before he realized that he wanted to work in the kitchen. 

“That knowledge led to messing around with different ingredients and actually cooking and learning in the kitchen,” he says. “The passion and fun for the food industry has only grown, especially since Chef Tyler Rolan has become my mentor.”

When he isn’t cooking, Matthew indulges in photography and filmmaking. He was active on the locally-produced short-film “Farewell My Darling.”
